Fondant is probably what you are looking for. Sold done by Wilkins. Not much taste, to be honest, I sorta soft, but the things designers often decorate the surface is smooth.
As marizpaning, as I did the things in general, so I do not think that I like a cake wrapped in it.
normally used in fruit cakes with marzipan (marriage) to the color of cherry pie that people keep stopping for an extended period of time. It tastes like almonds do not know if that is strange or not, it will be smooth and it is always cold, helps give a smooth surface without a double layer of ice, it would be too sweet. In just use a sponge base, it will look smooth.

NOOOOOOOOOOOO!
Use Melt!
This aspect of the topic based porcelain. You can use is a gentle and pleasant ... The taste is neutral.
Only the use of marzipan for the small details, because it is too expensive and it tastes a bit strange (like, ground almonds and egg whites or something. Not good.)
Fondant is the way forward. Make or buy the blob prefabricated cake decorating shop.
And be sure to use paste or gel food coloring - it's much easier to work and the color is better than the liquid.
It is tastefully
And you should be able to freeze
It would be difficult, depending on how difficult it is to start with
I believe it is sugar.
